Description
Inulin is a natural carbohydrate not digested by human enzymes. Occurs in the roots or tubers of some plants, most often obtained from chicory. Inulin is mildly sweet in taste, has about 1/10 sweetness of sugar. It can be eaten by people with diabetes and those who want lose weight.
Inulin is not absorbed in the intestines, only fermented, providing nutrients for good bacteria. It increases the acidity of the surrounding environment. Inulin in the intestines behaves just like fiber, binds large amounts of water, increasing the amount of nutrient content while lowering its calorie content.
It is recommended to consume up to 20 g inulin per day. This is due to the possible mild laxative action.
Application: Inulin can be replacement for sugar. Add to tea and drinks. It is used in the kitchen as an addition to cakes, puddings and custards as well as a thickener in jelly. Due to the stabilizing properties it can be used to produce home-made mayonnaise. You can thicken the soup and sauces. Added to the pastry will make the baked goods more crispy.
