Sodium ascorbate, otherwise known as ascorbic acid sodium salt, is an odourless granular or crystalline powder, white in colour, which tends to yellow.
It is characterised by a slightly salty taste.
Sodium ascorbate acts as an antioxidant, acidity regulator and stabiliser.
Sodium ascorbate is a source of vitamin C
One gram of sodium ascorbate contains 889 mg of ascorbic acid (vitamin C) and 111 mg of sodium.
